Next Sunday is Stir Up Sunday, the traditional time for making Christmas cake.

 

 

I love this time of year, you get to spend time pottering in the kitchen, the house smells amazing and at the end there is cake. What’s not to love?

 

 

I use this boiled cake recipe. This means that you make the cake in a pan melting the ingredients together. That takes all the hard work out of it.

 

 

I am making seven this year and they will be different flavours. I’ve had requests for brandy, whisky and amaretto. If you are not a fan of the booze you can just use a little fruit juice but the cake won’t need feeding. I’ll make six full-size cakes and the final mix will go into individual muffin tins so I have little cakes to eat or give as gifts. Yes, I have turned into the person who makes my own Christmas gifts. I’m coming to terms with this. It’s a whole new me.
