I am working class and Northern. We have breakfast, dinner and tea. There is something of the hobbit about me so there may be on occasion second breakfasts and pints.
There are times when I have a hankering for being a supper eater. In my tribe, supper is toast with a brew after 10pm.
If I were a supper eater this is the perfect supper dish. It’s smoked haddock and leek risotto. It’s dead quick and easy. It’s basically fishy rice pudding. I appreciate that my description will not be to everyone’s taste but it’s lush.
And risking losing you completely, we add cheese. Strong cheddar. So this is fishy, cheesy rice pudding. It also makes a great lunch the next day when the flavours have deepened and it’s gooey. Heaven.
