It is my Mum’s birthday tomorrow and there needs to be cake. It’s a rule.
It is my firmly held belief that if it’s your birthday, you choose the cake. This is why I can make ginger cake, chocolate cake, black forest gateau, strawberry and vanilla cake and rhubarb and strawberry cheese cake. If you want it, I’ll make it. It may not be pretty but it will taste good.
For Mum’s birthday, it’s lemon drizzle cake and this recipe is the best. It’s not wimpy, it’s full on lemon tanginess, has a great crust and the glaze makes it. Do not be tempted to scrimp. It’s really simple to make and is great with a brew or a gin and tonic.
