The Family Fizzy are trying to be more mindful and frugal. We’ve got big dreams and we want to fund those rather than buy more stuff. We also want to create less waste as this planet is very nice and we’d like to keep it. Finally, in a time when at least half a million people in the UK needed to use a food bank in the last year buying food to bin is morally wrong.
Meal planning and shopping lists are the order of the day but this week we managed to have three bags of peppers and six packs of cherry tomatoes in the fridge. The landfill potential was huge. That didn’t feel too fizzy. So the peppers and tomatoes were chopped, covered in oil, sprinkled with salt and chill powder and slow roasted. Once they were done they were added to fried onions, garlic and a tin of tomatoes and we have frugal, veg filled, spicy sauce for pasta. It’s been bunged in the freeze and it can be cooked from frozen on those “can’t be bothered” nights. The beloved thinks it’ll make a cracking pasta bake, I think it will be brilliant over pork. Versatile too.
