It’s pancake day tomorrow. Lent starts by using up all the good stuff in the house before fasting for 40 days starts. The good stuff being milk, eggs and flour.

 

 

Lent is not the time for fluffy pancakes. It’s a time for crepes. Thin, gorgeous pancakes that feel decadent and are so easy.

 

 

To make eight pancakes for eight you need:

 

  • 100 grams of plain flour
  • 2 eggs
  • 300ml of semi skimmed milk
  • a pinch of salt

 

Crack the eggs into the flour and beat together. Slowly add the milk and a pinch of salt. Whisk until smooth. Put the mixture in the fridge for at least an hour, but overnight is better.

 

 

Get a thin frying pan hot and add a small amount of vegetable oil. Pour enough mixture into the pan to evenly cover it. The pancake will be ready to turn in about 30 seconds, or a minute if you’ve been coy with the heat. Flip it over and leave it for another 30 seconds. You’re done.

 

 

Serve however you please but a sprinkle of sugar and lemon juice is best. Sometimes the classics cannot be improved on. Unless you are adding vanilla ice cream and salted caramel sauce. That’s alright too.
