I am a great believer that adding cheese to most things improves it.

 

 

We had a great breakfast in Amsterdam at Piqniq which was streaky bacon with fried eggs topped with cheese and tomatoes, then grilled, whacked on a baguette and served a powdered doughnut. We had to do it at home.

 

 

It was easy to recreate. Cook your eggs, smother them with cheese, grill then add tomatoes. We did not have doughnuts which is obviously remiss of us but we did have great wholemeal bread with loads of butter and proper crispy bacon. This was lunch yesterday and the middlest monkey asked for it again today. That’s a hit.

 

 

Next time I may add some spring onions. Or chilli. Maybe some chorizo. I do love a recipe that’s adaptable.
